Italy is reimagining how it prepares and enjoys lasagna, an iconic staple of Italian cuisine. While Bolognese remains the favorite, creative variations like fried lasagna, vegetarian options, and “pizza lasagna” are gaining popularity. Food delivery platform Just Eat revealed these trends during its July 29th “Lasagna Day” celebration.
Regional specialties such as pistachio lasagna, Neapolitan-style, tomato-based “rossa,” and Abruzzese versions showcase modern twists on traditional recipes. Innovative pairings include lasagna-filled supplì (rice balls), bite-sized “lasaballs,” and gourmet combinations featuring pumpkin, almonds, and mozzarella. Gluten-free alternatives also cater to dietary needs.
Lasagna remains Italy’s go-to comfort food throughout the day, with orders peaking during two key windows: lunch (11:00 AM–1:00 PM) as a “satisfying midday break,” and dinner (7:00 PM–9:00 PM) when it becomes the “hearty, warm centerpiece of Italian evenings.” According to Just Eat data, over 2,000 kg of lasagna were ordered nationwide in 2025.
